(Fun fact: \u201cThe phrase al fresco is borrowed from Italian for &#8220;in the cool [air]&#8221;, although it is not in current use in that language to refer to dining outside. Instead, Italians use the phrases fuori or all&#8217;aperto. In Italian, the expression al fresco usually refers to spending time in jail.\u201d Ha, thanks <\/span><a href=\"https:\/\/en.wikipedia.org\/wiki\/Al_fresco_dining\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">Wikipedia<\/span><\/a><span style=\"font-weight: 400;\">) \u00a0<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-weight: 400;\">Recently, I found an old favorite recipe that I found in <a href=\"http:\/\/www.cookinglight.com\/\" target=\"_blank\" rel=\"noopener\">Cooking Light Magazine<\/a> many years ago that is perfect for dinners in jail&#8230;err, outside &#8211; chicken satay with peanut sauce and spicy cucumber and red onion salad. \u00a0We love peanut butter around here, so naturally, we love this. My two younger girls devour the chicken (anything on a skewer is usually a winner for them) and they all eat plenty of cucumber slices &#8211; I keep a bowl of slices without the dressing on the table too. Here are the recipes for both the chicken satay and the salad:<\/span><\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\" wp-image-2281 aligncenter\" src=\"https:\/\/i0.wp.com\/thewanderingrumpus.comwp-content\/uploads\/2018\/05\/IMG_7891-300x271.jpg?resize=451%2C407&#038;ssl=1\" alt=\"\" width=\"451\" height=\"407\" srcset=\"https:\/\/i0.wp.com\/thewanderingrumpus.com\/wp-content\/uploads\/2018\/05\/IMG_7891.jpg?resize=300%2C271&amp;ssl=1 300w, https:\/\/i0.wp.com\/thewanderingrumpus.com\/wp-content\/uploads\/2018\/05\/IMG_7891.jpg?resize=768%2C694&amp;ssl=1 768w, https:\/\/i0.wp.com\/thewanderingrumpus.com\/wp-content\/uploads\/2018\/05\/IMG_7891.jpg?resize=1024%2C926&amp;ssl=1 1024w, https:\/\/i0.wp.com\/thewanderingrumpus.com\/wp-content\/uploads\/2018\/05\/IMG_7891.jpg?resize=560%2C506&amp;ssl=1 560w, https:\/\/i0.wp.com\/thewanderingrumpus.com\/wp-content\/uploads\/2018\/05\/IMG_7891.jpg?resize=80%2C72&amp;ssl=1 80w, https:\/\/i0.wp.com\/thewanderingrumpus.com\/wp-content\/uploads\/2018\/05\/IMG_7891.jpg?resize=600%2C542&amp;ssl=1 600w, https:\/\/i0.wp.com\/thewanderingrumpus.com\/wp-content\/uploads\/2018\/05\/IMG_7891.jpg?w=1780&amp;ssl=1 1780w, https:\/\/i0.wp.com\/thewanderingrumpus.com\/wp-content\/uploads\/2018\/05\/IMG_7891.jpg?w=2670&amp;ssl=1 2670w\" sizes=\"auto, (max-width: 451px) 100vw, 451px\" \/><\/p>\n<p><span style=\"font-weight: 400;\">Chicken satay ingredients:<\/span><\/p>\n<ul>\n<li><span style=\"font-weight: 400;\">1 lb. skinless, boneless chicken breasts cut into 8 strips<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1 tbsp light brown sugar<\/span><\/li>\n<li><span style=\"font-weight: 400;\">2 1\/2 tbsp low-sodium soy sauce<\/span><\/li>\n<li><span style=\"font-weight: 400;\">2 tsp bottled ground fresh ginger (such as Spice World)<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1 tsp grated lime rind<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1\/4 tsp crushed red pepper<\/span><\/li>\n<li><span style=\"font-weight: 400;\">2 garlic cloves, minced<\/span><\/li>\n<\/ul>\n<p><span style=\"font-weight: 400;\">Sauce:<\/span><\/p>\n<ul>\n<li><span style=\"font-weight: 400;\">1 tbsp light brown sugar<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1 1\/2 tbsp low-sodium soy sauce<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1 tbsp fresh lime juice<\/span><\/li>\n<li><span style=\"font-weight: 400;\">2 tbsp peanut butter<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1\/4 tsp crushed red pepper<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1 garlic clove minced<\/span><\/li>\n<\/ul>\n<p><span style=\"font-weight: 400;\">Heat grill. \u00a0Combine chicken and next 6 ingredients (through 2 garlic cloves) in a medium bowl. \u00a0Let stand 10 minutes.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">To prepare sauce, combine all sauce ingredients in a medium bowl stirring until sugar dissolves and peanut butter incorporates.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Thread chicken strips onto skewers. \u00a0Place chicken on grill coated with cooking spray grilling 5 minutes on each side or until chicken is done. \u00a0Serve with sauce.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-weight: 400;\">Spicy cucumber salad ingredients:<\/span><\/p>\n<ul>\n<li><span style=\"font-weight: 400;\">1\/2 cup rice vinegar<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1 tbsp sugar<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1 tbsp minced seeded jalapeno pepper<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1 tsp. grated lime rind<\/span><\/li>\n<li><span style=\"font-weight: 400;\">3 cups thinly sliced English cucumber<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1\/2 cup thinly sliced red onion<\/span><\/li>\n<\/ul>\n<p><span style=\"font-weight: 400;\">Prepare dressing (first 4 ingredients) in bowl. \u00a0Add cucumber and red onion.
